Don’t forget to have your pressure canner gauges tested before the season gets underway.  At Lane County Extension, we offer testing for a nominal fee.  Bring in your canner lid only at your earliest convenience, and pick it up after the scheduled testing times.  A trained volunteer tests the gauges en masse on the 2nd and 4th Tuesdays of the month, from 11 to noon.

If your gauge is malfunctioning, we offer new three-part weights for $15.  We don’t sell the rubber gaskets, however.  You can find these at a range of home appliance stores, from Bi-Mart to Down to Earth.

But we do sell Clear-Gel, a commercial-grade food starch used in canning fruit pie fillings.  Unlike corn starch or other thickeners, it doesn’t break down in the heat and cooling involved in canning.  1 lb. is $4; 4 lbs. are $15.
