what are you doing to keep your cool?

DSCF0468Here in Eugene, we’re facing day after day of increasingly hot weather.  It’s 102 degrees right now, and very few houses have A/C.  Cooking inside is out of the question; moving?  Not so good either.

I discovered that fresh corn tortillas (warmed in the toaster oven) with tomatillo salsa, queso fresco, cilantro, and cold salmon and grilled jalapeños from yesterday’s grill make a perfect supper. I have a big jug of Korean roasted barley tea in the fridge for thirst-quenching.

Is anyone even interested in eating this week?  Any ideas for cool, refreshing meals, snacks or drinks?

    I’m here in Eugene too. I went down to LA for the weekend and lounged around in 80 degree weather, only to come back today to 100+! Without the benefit of AC, I’m beating the heat with Chardonnay and ice water. Sip for sip. Distraction and hydration at once!

    Today: Iced somen noodles with bottled soup base.
    Tomorrow: Leave town and head to the coast.

    We butterflied and grilled a whole chicken and have been eating pitas full of cold chicken, yogurt cheese feta and lots of cold, crisp vegetables. Lots and lots of water and many fans to try and keep the house cooler than the outside.

    I’m all about the watermelon and cold fried chicken today. And maybe another trip to the lake we fled to last night!

    I made some pasta with a food processor sauce of roasted red pepper, garlic, and sour cream.

    If you don’t like the taste of water (or you’re just plain looking for a different flavor) try adding lemon and lime slices and mint to a pitcher of ice water!
