culinaria cookbooks

As a graduate student, I am poor. Not poor enough, however, to take advantage of a tremendous opportunity to buy some of the Culinaria series of world cuisine cookbooks, which are now on clearance at Borders for $9.99. These particular editions are paperback, and they’re large and hefty, so I’ll only recommend the paperbacks if you are impoverished like me. Otherwise, go for the hardback. The Borders in Eugene has several copies of the France, Russia, Italy, Southeast Asian Specialties and Germany cookbooks. These cookbooks are very difficult to find, and the prices wildly fluctuate as they go in and out of print. I’ve never seen them priced this low, and I’ve been monitoring them for a couple of years.

I like these cookbooks so much that I even named my blog after them.

The Culinaria series, which consists of the Caribbean, France, Germany, Greece, Hungary, Italy, Russia, and the United States, specializes in cultural and regional specialties in each of the countries featured in the books. France, for example, has chapters for twelve gastronomical regions, all with glorious photographs and insets of particular regional dishes and products, such as specialty preserves, mustards, mineral water, cheeses, pastries and even offal. There are many recipes for classic dishes and the recipes seem to be uniformly excellent, from what I can tell from the few reviews online and my own experience. The real strength of these books, however, is not the recipes but the cultural background and culinary specialties described in exhaustive detail. You will find stuff in these books that is nowhere else in English, including the internet. Two major weaknesses relate to the scope and heft of these 500-page books: the print is quite small to make room for the thousands of photographs, and they are very large and heavy, looking more like coffee table books than cookbooks. I use them mainly as references to support my other ethnic cookbooks, so I am not too worried about the wear and tear they’d get if they were battered about on the counter.

The two-volume European Specialties and slim Southeast Asian Specialties volume both feature several unlike countries glommed together; quite frankly, I don’t think they are worth the price, but these books still feature gorgeous photography, cultural insights, and lengthy discussions of products and dishes. The massive Culina Mundi, a world gastronomic tour, is rather ridiculous at about double the size of the other cookbooks. I suppose if you only wanted one cookbook, that would work for you, but please.

The German publisher Konemann started putting out the Culinaria series out about ten years ago, and most of the Culinaria cookbooks have gone through two editions. I believe that the cookbooks are translated into their native country of origin’s languages (I’ve seen the Hungarian Hungary, the German Germany, and the French France), and I’d imagine that since the publisher is German, they are available in German as well as English, but I don’t have evidence for that. H. F. Ullmann and/or the Langenscheidt Group now puts them out, with new editions in the past couple of years and upcoming in 2008. (I think Konemann went out of business, but you’ll still see the publisher listed as Konemann on several online cookbook sites for these cookbooks.)

The Mediterranean Cuisine series, which you can also see in the photo above, is a set of smaller, much more idiosyncratic cookbooks of the cuisines of the Mediterranean: Greece, the Islands of the Mediteranean, Italy, France, Morocco, Tunisia, Turkey and Spain. This series is comprised of recipes and techniques for major dishes in these countries. Instead of focusing on particular regions, however, this series features a team of chefs from the particular country who make the recipes. I’m not sure I’d recommend them to the beginning cook, but they feature interesting recipes in underrepresented cuisines and show step-by-step instructions (of varying quality) for each recipe. The biggest problem I have with these cookbooks is a lack of an index and glossary, a necessity for unusual cuisines. The writing is also not nearly as good as the Culinaria series, and there are some awkward syntax problems that may be a function of a non-native translator. The recipes are inflected by each particular chef’s style and vernacular, which could either be good or not, depending on the chef, and since the books have smaller production values and size than the Culinaria series, they don’t have the comprehensive scope.

    Actually, I dont have a blog up at this moment that is food oriented but I am trying to get one up in the near future.
    I started picking up a couple of the paperback versions around Seattle and they are actually smaller in size by a considerable amount.
    I’ll give you a heads up on my foodie blog when its up and running.
    Unitl then try reading “The River Cottage Meat Cookbook” and I think that the author parallels me (sustainabliity and ethics).

    I only found out their existence after buying the Germany one in hardback one week and a half ago for sale at $15.99 Cdn in Vancouver.bc.ca. I started researching and want them all. I made an Excel spreadsheet with much information. Two do not have Culinaria as a first title.

    The German publisher Konemann Verlagsgesellschaft was founded in 1993. It had distribution problems and filed for bankruptcy

    protection in December 2001. The last Culinaria book published was in 2002. Konemann went out of business late 2003.

    Culinaria Britannia & Eire (ISBN 3829040857,January 2003, 320 pages) and Culinaria India (ISBN 3829041519, May 2002) were

    produced but never released.

    H. F. Ullmann (an imprint of Tandem Verlag) of Germany acquired the rights and all the bankrupt publisher’s remaining stock.

    Culina Mundi (Hardcover, 1056 pages, 2006, $69.95 US srp) by Christele Jany (Editor) is English title for the Spanish (?)

    release Culinaria Mundial (Hardcover) by Fabien Bellhansen. Both have the same cover.

    I started with European Specialities,the massive hardcover volume.My older brother told me about finding it at Waldenbooks on their bargain tables in Jan. 2002.I picked up my copy the next day,certainly one of the best $20 I ever spent!!

    This series is a great find,not just for amateur & pro chefs,but anyone interested in history,culture & architecture as well.

    Since then I’ve purchased via 1/2 Price Books and/or Amazon,Borders etc,the France,Italy,Germany & Spain softcover volumes.Am wanting the Hungary & Russia books next,as my finances & space permit.I recently built a 3rd bookcase to store my slowly growing collection of cookbooks & others regarding history,architecture,cabinetmaking etc.

The downtown store with 3 floors and the largest one in BC has discount books that are not in other local Chapters.

I found this site looking for more information on the ‘smaller’ volumes (Hot Appetizers, Cold Appetizers, Desserts, Pastries etc). Does anyone know if the recipies are duplicated in the 830 page volume from the smaller volumes? Or, if its worth getting the smaller volumes as well? Any advice would be appreciated! Thanks.

    Alison: I don’t know. Just a guess: because the “smaller volumes” of the international cookbooks are vastly different from the longer volumes on the same country (for example, the Mediterranean series volume on Spain is a completely different concept, editor, and set of recipes than what appears in Culinaria Spain), I would venture to say the other cookbooks also differ. Almost hard to believe that someone had the money and care to craft these wonderful cookbooks, no?

    A seller on ebay Australia posted an entire set of the Eurodelices (Meat, Fish, Desserts etc) and I felt compelled to buy them! From comparing the indexes between the ‘small’ Eurodelices volumes to the 830page volume, it seems that the larger book is a selection of receipes from the individual books. So my untouched 830-pager is put away for a rainy day, until I find someone who will appreciate it!

    Thanks for the info on the Mediterranean series, I’ve been considering buying them but wasn’t sure about how similar they were to Culinaria.

    Would you know if there is much or any recipe duplication in Culina Mundi / European Specialties and the other series?

    The books are amazing I adore them, shame Konemann went under before getting around to publishing one edition for every country of the world.

    Thanks to an earlier poster, I’m eager for the English translation of the China edition as well. And I agree, there should be editions for each India and combined UK & Ireland (“Brittania & Eire”). I also look forward to a focus on South American countries, likely necessarily divided by nation and/or region. I could, in the very least, see Brazil as its own edition. My only quandry with the wide variety of cuisine in much of S. America is that it is unavailable in the US, Canada, and Europe. In the Peruvian Andes, for example, Alpaca is a delicious specialty cooked a variety of ways but impossible to find anywhere in the states. The same is true for many of the foods around the Amazon Basin and its headwaters. Incentive to travel I suppose? But the mid boggling variety of potatoe, myriad of Cerviche dishes along the coast, including Tiger Juice, would be a great feature, as well as the growing wine regions and cheeses from those regions and the Chinese and Japanese immigrant influences, as well as the historical German immigrant population. The Argentine grilling could practically be its own volume, at least a chapeter. However, an edition for the Scandanavian countries (including Iceland) would seem the most logical next step.

    Interesting: I got a second email from a different person at Ullmann. This person confirmed that the China volume will appear in English in Autumn 2010 (ISBN: 978-3-8331-4995-5). At about the same time, the Japan volume will be published in German, with an English translation to appear in the Spring of 2011. However, this person says that further volumes are not planned for the time being.

    Just wanted to say that I received the Culinaria: China in the mail today from Amazon.uk. Yes, it is the German edition, but I couldn’t wait.

    Its beautiful: large format, like the original printing of Culinaria, with loads of pictures and recipes. It talks about opera houses and food, drinking games, bamboo, and pu-erh tea among many other topics. It goes province by province. My only regret is that it doesn’t have the Chinese characters for the names of the dishes. But aside from that, its really encyclopedic and I can’t wait to settle down with it.

    to all –

    since reading this original blog entry, i have acquired these culinaria books: spain, italy and germany; i am waiting on the delivery of greece and intend to purchase hungary next. this is an outstanding series and i recommend it to anyone who really wants to get into the food and culture of a country.

    some may not be aware that time/life developed a similar serices in the 1960s and early 70s called “foods of the world.” i have all of the books in this series and find it to be right along the same lines as the culinaria books. this series is certainly worth a look as it includes every country or region of the world, except, for some reason, korea. with that one exception, it is a very comprehensive and complete collection of food, culture, history and geography. even though some part of the series are a bit dated (the USSR still exists, and the war in vietnam is in full bloom etc.), they make a very interesting read and all of the books are stuffed full of great recipes and photos.

    in fact, the time/life foods of the world series was the inspiration for our above-mentioned forum, http://foodsoftheworld.activeboards.net. anyone and everyone with similar interests are invited to visit and join.

    Just thought I’d give everyone a heads-up. Many months ago, I placed Culinaria: China on pre-order from Amazon. When I check the page, it says it is still unpublished.

    However, browsing Amazon today, I found Culinaria: China for sale. It turns out that Amazon has the book listed twice but with different ISBNs.

    So, if some of you had also pre-ordered the book and are still waiting, I’d thought you might like to know that it really is available.

    the Relaunch of Culinaria Germany is coming out this August.

    We hope you will like it.

    We are still working on Japan. But the project consumes hundreds of thousands of Euros. maybe next year ?

    Culinaria Germany is one of the very best in the series. Thanks, Florian. I just bought China and have to say I’m a bit disappointed in the recipes and food photos, as there are fewer of both than in the stellar European volumes. But it’s still unlike anything else out there.

    Hi,
    any news for the publication of new Culinaria book ? I’m a french guy living in Australia now, and I love the fact that you present the recipes region by region, with history of regions and ingredients, which almost no other book does. I loved the Italian, Greek, Spanish, German, Russian, and Hungarian cookbooks. I was a bit disappointed by the Chinese one, because it was more about photos and history than cooking, there were only a couple of recipes for the szichuan region for example, same thing for the french one, cassoulet was overlooked for example, and the recipe for the kouign amman wasn’t well explained. But I’m really looking forward to new books, especially the japanese one, because all you can find about japanese cooking are sushis and soups… It’s never about noodles, pork or chicken, hell most of japanese cookbooks don’t even have a ramen recipe in it…I’m also looking forward to reedition of the USA cookbook, which is nowhere to be find (and it has been like that for years now), and some new countries/regions, such as Mexico, India or Scandinavia.

    Hi,

    still working on Culinaria Japan. Takes more time than expected especially due to the Fukushima incident and we have to invest more moeny. Hope to release it next year.

    Culinaria USA will be too expensive to update. However, the book is still timeless. We are considering an unchanged re-edition with some minor updates only.

    China is indeed different, but we are still happy with the result and think it is a unique books, which keeps the style of the previous Culinarias. In Culinaria Japan we are showing more recipes.

    Germany is coming out in a couple of weeks (now on the vessel to NY port). Check out amazon or better you local book store! But it will be also available in Australia in 3 to 4 weeks.

    Thanks for this quick answer. I usually buy my books from Amazon UK, because there’s free shipping to australia for orders above 25£ and because there’s no VAT. Good luck with the Culinaria Japan. I think you might benefit from releasing them worldwide in english in the first place instead of german, it seems that a lot of people in the world are really fond of the Culinaria collection, because basically it’s quite unique.

    I think I have a complete collection of all the Culinaria books so far. I’m looking forward to the new Japan. I hope the new Germany includes foods of the GDR. I wonder if Florian would give us a hint about new volumes after Japan?

    I think the fact that there is even this blog about ANY series of books nowadays speaks to the excellency of that series of books.

    since my last post, i have received greece, france and hungary – and russia is enroute via USPS.

    all of these books have been fascinating, and this series continues to impress me as i learn about the food history and culture of so many unique places and peoples. i must say, i beleive that hungary is my favourite so far, as the simple, humble traditions there remind me of my own rural heritage, and are also similar to many of the foods that my wife’s family has brought to my life, as her heritage is hungarian and slovak.

    if anyone is still “sitting on the fence” where these books are concenred, don’t hesitate any longer ~ get one and see what you have been missing! also, please feel free to visit and participate in my forum dedicated to world cuisine, “http://foodsoftheworld.activeboards.net, where we discuss the intersection of food, history, people and culture.

    Well, just receive for birthday “Culinaria China” in Spanish. Great book, i allready have Hungary, Greece, Italy, Spain and Europe. I think all the others were edited in spanish but germany. Love this series, so a reedition of United States and the launch of Japan or India would be awesome.

    Hello everyone! I just discovered this page and these comments recently as I was searching for “Culinaria India”. It’s such a travesty that the book was produced, but never printed. I love the Culinaria series and wish there were more books to cover other parts of the world. I recently purchased the entire Eurodelices series and Culina Munda off eBay after reading the comments on this page.

    The reason I am posting here is because I just discovered another nice series of “world cuisine” books called “The Beautiful Cookbook”. There are about 17 books in the series, as far as I can tell. The production value and quality of the books approaches that of the Culinaria series.

    Finally, if anyone has a suggestion on an India cuisine book that would be on par with the Culinaria series, I would love to hear your recommendation!
